DESCRIPTION
"Having the good fortune of tasting Barolo all over the world I have learned to know its aficionados, and for sure you recognize the Nebbiolo purist because he reaches ecstasy when you pour him a Serralunga wine into the glass." -Federico Ceretto- Moving from Baudana towards the center of Serralunga d'Alba it may happen to turn our gaze to the east, and it is on this side that we observe the Prapò: these revolve around the hill and on one side look to the high Langa. We have been treading on this land since the seventies and we know what it offers: the soil is rich but the exposure is fresh and the grapes ripen slowly, an advantage in rainy years, an extra opportunity in hot ones.
Serralunga d'Alba
Fermentation takes place on natural yeasts in steel tanks and runs out within about 15 days. This is followed by the maceration process which lasts from 10 to 15 days ...
After malolactic fermentation, around the month of December, the wine is transferred into French oak barrels and then into barrels ...
What arrives in the glass does not betray expectations and has the flavor of Serralunga: the nose is darker and more pulpy than that which characterizes the wines of the western side of the appellation, and is split in two by very clear balsamic sensations, these raise the olfaction stamping it in an always recognizable way. In the mouth the texture is surprising: the tannin fills the taste but does not corrupt it, it strengthens it without drying out its progression. And it is a pleasure to sip it as a young man, if well followed at the table, or wait for its maturity and have fun untangling the complex skein of evolution. Delicate and harmonious taste with persistent tannins.
