DESCRIPTION
The desire to express the exceptional qualities of the estate has been the basis of Ornellaia's philosophy from the very beginning. Ornellaia is a cuvée of Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot, a faithful expression of a unique terroir that has always been in harmony with nature.
Location Ornellaia - Bolgheri - Castagnetto Carducci (Li)
The harvest took place by hand in 15 kg crates and the bunches were selected on a double sorting table before and after destemming and subjected to soft pressing at the end. Each variety and each parcel was vinified separately. Alcoholic fermentation took place in stainless steel vats at temperatures between 26-30 ° C for a week followed by maceration for a total of about 10-15 days. The malolactic fermentation took place mainly in oak barriques (70% new and 30% first passage).
The wine remained in barriques in the Ornellaia cellar at a controlled temperature for a period of about 18 months. After the first 12 months the assembly was carried out and then reintroduced into the barriques where it spent another 6 months. The wine remains in the bottle for another 12 months before being launched on the market.
NOTES OF THE ENOLOGIST. "2012 was a generous year of sunshine characterized in general by dry weather but also by rain which, falling at the right time before the harvest, helped the vines to shelter from drought and excessive heat and allowed for regular ripening and homogeneous. The wines, large and generous, have a particularly seductive and enveloping character that we like to describe with the word 'Incanto'. Ornella 2012 shows an intense ruby color, and to the nose with intensely fruity and spicy notes of great pleasure. On the palate it is broad, round and without edges, with a smooth tannin. In 2012 there is no lack of the proverbial concentration that distinguishes the great vintages of Ornellaia, but this vintage hides it behind a generous and sumptuous structure, in a finish of long persistence.
