DESCRIPTION
Audace: a wine that expresses the desire to embark on new paths, courageous and determined, with an expressive and elegant character like my great-great-grandmother Leonia who inspired me in my innovative choices. The harvest took place by hand in 15 kg crates in the coolest hours of the day. Once they arrived in the cellar, the grapes were subjected to a slow and delicate pressing which allowed the extraction of the must from the heart of the berry. Once the cuvée was obtained, a 12-hour cold clarification was carried out which allowed the clarification which was decisive in creating a qualitative harmony typical of Leonia. Fermentation took place in stainless steel tanks at a constant and controlled temperature; a part was fermented in wood.
In the March following the harvest, the various cuvées of Chardonnay and Pinot Noir were blended, followed by tirage (addition of liqueur de tirage) and refermentation in the bottle with subsequent aging on the lees for at least 32 months. The operation ended with remuage and dégorgement which was followed by further refinement in the bottle.
In the glass Leonia Brut shows a perlage of elegant finesse and the numerous bubbles that surround the edge of the glass amplify the golden reflections of the wine. On the nose this Classic Method gives mineral notes and white spring flowers such as hawthorn; followed by hints of acacia honey, pastry and white pulp fruit such as September peach; in the finish there is no lack of more evolved aromas reminiscent of dried fruit. The entry into the mouth is clear and clean, the effervescence tickles all the taste buds without attacking them, on the contrary it favors the perception of a decisive creaminess. The finish is long and recalls the softness of caramel and the aroma of licorice combined with some toasted notes.

It goes well with delicate appetizers and fish first courses, white meats and medium-aged cheeses.

The wine history of the Frescobaldi, an illustrious Florentine family dedicated to finance, trade, art and culture, began nine centuries ago, and to testify this atavistic and indissoluble bond there is even a map of Tuscany of the fifteenth century, preserved to the Uffizi Gallery, on which "the lands of the Frescobaldi" and the "Castello di Nipozzano" are indicated with great relief. This manor, built in the year 1400 as a defensive stronghold and became the fulcrum of rural life in the neighboring countryside in XNUMX, houses the cellars where the splendid reds of the homonymous estate are produced and aged in barriques, which constitutes the epicenter of the activities. of the Frescobaldi house.
