DESCRIPTION
Produced with the same passion and attention to detail reserved for Ornellaia, Le Serre Nuove dell'Ornellaia is a real “second vin”. A blend of Merlot, Cabernet Sauvignon, Cabernet Franc and Petit Verdot, which combines immediate pleasantness and taste-olfactory complexity with a proven aging potential.
Location Ornellaia - Bolgheri - Castagnetto Carducci (Li)
The harvest took place by hand in 15 kg crates and the bunches were selected on a double sorting table before and after destemming and subjected to soft pressing at the end. Since 2016, in addition to manual selection, the optical one has been introduced to further increase the quality of the selection. Each variety and each parcel was vinified separately. Alcoholic fermentation took place in stainless steel vats at temperatures below 25 ° C for two weeks, followed by maceration for about a week, not to exceed a total of three weeks in the tank. The malolactic fermentation began in steel vats, and ended after the transfer to barriques (25% new and 75% second passage).
The wine remained in barriques in the Ornellaia cellar at a controlled temperature for a period of about 15 months. After the first 12 months the assembly was carried out and then reintroduced into the barriques where it spent another 3 months. The wine remains in the bottle for six months before being launched on the market.
NOTES OF THE ENOLOGIST. “Le Serre Nuove dell'Ornellaia 2017 expresses itself with exceptional elegance, combining great aging potential with immediate pleasure. Intense ruby red color, with purple reflections, the nose shows a beautiful complexity with aromas of small red berries and balsamic notes reminiscent of the Mediterranean scrub. In the mouth the quality of the tannic texture is particularly striking, which is smooth and silky. The tasting ends in a long and unexpectedly fresh finish. " Olga Fusari - Oenologist - May 2019.
