DESCRIPTION
This Pinot Nero Alto Adige DOC comes from the perfect combination of terroir and work in the cellar. The vineyards are located near Lake Caldaro, at about 600 m above sea level, on limestone soils and a microclimate made ideal by the lake's thermal flywheel. The maceration on the skins takes place at low temperatures which allow to stabilize the tannins and to extract the maximum of the polyphenolic component.
Mid-hill Caldaro (BZ)
Red vinification with maceration of the skins, starting at 12-13 ° C increasing it progressively with fermentation to reach 25-27 ° C at the end of fermentation. The low temperatures at the beginning of alcoholic fermentation allow the extraction of the coloring substances typical of Pinot Noir and their stabilization with the grape's own tannins.
At the end of fermentation, the young wine is decanted into 30 hl wooden barrels where the refinement takes place for 4/6 months.
Characteristic ruby red color, with an elegant scent of red fruits. The flavor is soft, inviting with a fine and persistent aftertaste.
