DESCRIPTION
Grown on the hills of Caldaro and Termeno, the Gewürztraminer Alto Adige DOC of the canina Kettmeier is born in the vineyards at an altitude of 400 m on clayey soils. The harvest takes place between the end of September and the first weeks of October, when the grapes reach full aromatic ripeness. The clusters undergo a rapid maceration on the skins at a controlled temperature, in order to extract the most of the aromatic precursors and the sensational varietal aromas.

The grapes harvested at the right technological and aromatic ripeness are vinified in white with short maceration of the skins at low temperatures to optimize the extraction of aromas. Fermentation takes place in steel at a controlled temperature of 15-16 ° C.
