DESCRIPTION
The Cerasuolo di Vittoria Classico Dorilli represents for us the quintessence of this ancient and noble wine. It comes from a careful selection of the vineyards that surround the beautiful and unique Dorilli estate, named after the nearby river Dirillo, landing place of the brave Aeneas. A fine and elegant expression, the result of the union of the noble Nero d'Avola with the Frappato di Vittoria, the Iblean grape variety par excellence, slightly marked by the aging in wood. A limited production for those who love small Italian denominations, history and testimony of our land.
DORILLI VINEYARD, VITTORIA (RA).
Destemming followed by 21 days on the skins at 25 ° C; after racking, malolactic fermentation in steel tanks.
Aging for 12 months in oak barrels.
It almost seems that the wine takes its ruby-violet color from the red sands of these Nero d'Avola and Frappato vines. The aromas of ripe black cherries blend with that of cardamom, vanilla and cinnamon. The tannin - ripe, soft, round - melts in the mouth thanks to an incredible sweetness of fruit. Here, oriental spices mingle with complex flavors of smoked bacon, cooked must, marjoram and prickly pears.

Extraordinary with roasted pork ribs, well seasoned and peppered. Its savory complexity goes well with fatty seabed fish cooked in stew, in stews, even going so far as to support combinations with spicy fish with an Asian touch.
