TIGNANELLO ESTATE, San Casciano in Val di Pesa (FI)
The 2015 harvest, regular in its course, will be remembered for the harvest of completely healthy and ripe grapes, thanks to very favorable climatic conditions throughout the season. Despite this, the attention was very high, both in the vineyard and during the harvest and winemaking operations. Upon arrival in the cellar, the grapes were delicately de-stemmed and the berries, before being pressed, carefully selected at the sorting table; here the attention to detail ensured that only the perfect grapes entered the conical winemaking tanks of 60 hl. During fermentation and maceration the musts are slowly transformed into wine; in this phase extreme care is required to maintain freshness and aromas, without neglecting the extraction of color and tannin management aimed at sweetness and elegance. Once the skins and the wine were separated, the malolactic fermentation was started which, in barriques, enhanced the finesse and pleasantness of the wine.
The aging process takes place in new French oak barrels for about 18 months. During this period the different lots, vinified separately according to the variety and the viticultural variables, are raised in wood, and then joined a few months before bottling.
Notes from the winemaker: The 2015 harvest is to be considered one of the best ever due to its ideal climatic trend in all seasons, culminating in the harvest period that allowed the grapes to ripen perfectly. The extreme attention during the vinification and a careful choice of the woods for the maturation guaranteed to obtain a wine with undisputed potential, with an excellent balance and a great personality.Solaia 2015 has a very intense ruby ​​red color with violet reflections. Excellent expression and aromatic complexity: intense notes of plum jam and ripe dark fruit such as blackberry, blueberry and black currant stand out on the nose. The evident aromas of chocolate and licorice are perfectly integrated, leaving room on the finish for a sensation of mint capable of giving the bouquet a pleasant freshness. On the palate the wine is harmonious, with an excellent and balanced structure; the roundness and sweetness of the tannins make it compact, elegant, with an extremely long finish and a very persistent spicy aftertaste.

HOW TO SERVE

18-20 ° C

It is advisable to oxygenate in a decanter for at least an hour before serving.
You can cellar it for over 15 years if kept correctly.
Grilled meat, roasts, braised meats, game, cold cuts and aged cheeses.
