TASTING NOTES

Castello della Sala's “Conte della Vipera” is a semi-aromatic white wine obtained from the international vines Sauvignon Blanc and Sèmillon. Easy to drink, medium-bodied, fresh, smooth and rich in aromas. At sight it shows a light yellow, with greenish reflections. The nose expresses a bouquet of hints of fruity notes, from citrus to peach, to exotic fruit. On the palate it offers an excellent structure, with a fresh, immediate and pleasant sip, and a persistent and harmonious finish.

'Conte della Vipera' - Umbria IGT 2019 - Antinori: WHY WE LIKE IT

The 'Conte della Vipera' is a great white from the Antinori family, produced on the 'Castello della Sala' estate. Born from the skilful assembly of international vines typical of Bordeaux, Sauvignon and Sèmillon, it is an elegant wine with excellent structure, fresh and enveloping, but able to give great satisfaction even several years after the year of production.

The grapes, after harvesting, are softly pressed, and the must ferments at a controlled temperature in stainless steel tanks, where it then remains to refine until bottling.
Aging for a few months in steel and 12 months in the bottle.

TO ENJOY IT BETTER

Medium-bodied white wine that does not require oxygenation to be best tasted.
Wine ready to drink immediately, but which can evolve well in the cellar for 3-5 years.
Ideal with first courses, pasta or risotto, with fish dressings; clams, scampi, prawns, fresh tuna or swordfish, but also excellent with vegetarian dressings. Also to be combined with grilled fish and crustaceans, and baked fish, Dentex, Redfish, Amberjack, prepared with simple and not too elaborate sauces and condiments. Do not overlook the combination with raw fish dishes, sea bass, grouper, but above all the red tuna carpaccio.
