DESCRIPTION

TIGNANELLO ESTATE, San Casciano in Val di Pesa (FI)
The favorable climatic conditions of the harvest period made it possible to harvest the grapes of the Solaia vineyard according to the level of ripeness due to the sun exposure as well as the vigor of the plants, thus allowing to have grapes of the highest quality. These advantageous conditions have not avoided putting the usual care in the sorting as well as in the selection of the bunches in the vineyard, in order to get perfect grapes to the cellar, a necessary condition for obtaining wines of a high quality profile. The harvest was carried out strictly by hand and, as in previous years, during the vinification, great attention was paid to the fermentation and extraction phases, carrying out the subsequent delestage and reassembly operations in order to respect the varietal aromas and the high content of color of the berries. For all the varieties (Sangiovese, Cabernet Sauvignon and Cabernet Franc) the fermentations were carried out at average temperatures of 27 ° C, without ever exceeding 31 ° C, to maximize the olfactory sensations and the typicality of the fruit, very present in the raw material. The musts immediately showed complexity and varietal typicality in the aromas, demonstrating an elegance and color such as to predict a year with great potential. After racking, carried out when the alcoholic fermentation was over, the wines were placed in oak barriques to carry out the malolactic fermentation by the end of the year.
During the aging period, which took place in new French oak woods and lasted about 18 months, the different batches of wine were managed separately and constantly tasted to control and maximize their aging in wood. As always, great attention has been paid to the evolution of each barrique, to control and guarantee the elegance and character of the tannins, also thanks to the decanting carried out periodically. Finally, the wine was assembled and bottled on the farm, refining for a year in the bottle before being placed on the market.
Solaia 2007 is a wine of great complexity and solid and full-bodied structure. The nose is fruity and intense, sweet and with notes of mature Cabernet that give the wine a strong identity. In the mouth the tannins are soft and go in the direction of sweetness and harmony. The varietal notes dominate and overall prepare for a long finish of great persistence.

HOW TO SERVE

18-20 ° C

It is advisable to oxygenate in a decanter for at least an hour before serving.
You can cellar it for over 15 years if kept correctly.
Grilled meat, roasts, braised meats, game, cold cuts and aged cheeses.
