DESCRIPTION
Col d'Orcia is a traditional producer of Brunello di Montalcino. The choice to continue using Slavonian oak barrels was made many years ago, well before the debate between modernist and traditionalist producers even started. Tradition means respect for the essence of Sangiovese di Montalcino which lies in the aging potential, in the improvement of the wine through the long permanence in wood and in the consequent aging in the bottle. Even today, in Col d'Orcia, Brunello di Montalcino is aged for 3 full years in large oak barrels before bottling and is kept in the cellar for 1 year before being released on the market.

Fermentation on the skins lasting 18-20 days, at a controlled temperature below 28° C, in 150 hl low and wide steel tanks, specially made to extract tannins and color effectively but delicately.
4 years of which 3 in Allier and Slavonian oak barrels with a capacity of 25 – 50 and 75 hl and subsequent refinement in the bottle for at least 12 months in controlled temperature rooms.
Color: Ruby red, with garnet reflections. Bouquet: Complex and elegant. The intense fruity notes, such as blackberry, integrate with the spices given by the oak. Flavour:Wine with excellent structure, full and persistent with soft and ripe tannins. It has a savory and pleasantly fruity aftertaste.

It can be left to rest in the cellar for over 10 years if kept correctly.
Perfect to accompany red meats and game, it is ideal in combination with aged cheeses.
CELLAR
Col d'Orcia is one of the historic companies of Montalcino. Today's lineage dates back to at least 1890, the date on which official documents show that the Franceschi family originally from Florence bought the property, later known as Fattoria di Sant'Angelo in Colle. In early 1933 the Fattoria di Sant'Angelo in Colle presented its Brunellis at the "wine exhibition" (First Exhibition of Italian Wines) held in Siena, one of the first commercial activities presented in Italy, decades before the Brunello became a precious (first class) wine of international and world level.
