Careful selection of Chardonnay grapes only, harvested by hand.
At least 7 years on selected yeasts from own cultures.
The perlage, fine and persistent, dances between golden reflections. In the bouquet of great complexity, notes of candied cedar, quince jam and floral sensations stand out, which are the prelude to more complex sections of sea breeze and spiced bread. Freshness and flavor blend in perfect harmony with a refined softness that takes you back to the long stay on the lees. The final gustative persistence is magnificent, giving flavors of white pepper and dehydrated apricot.
