DESCRIPTION
Pinot Noir is the cross and delight of the greatest winemakers in the world: a difficult vine to grow, it needs special care, a rare work that manages to express itself in all its grandeur only in some environments and in some vintages. Ca 'del Bosco has taken up the challenge and since 1983 has been producing this Pinot Noir of world value, the synthesis of the extraordinary vocation of the terroir.
ERBUSCO (BS)
The Pinero is the result of a careful selection of the grapes and a wise vinification conducted in full compliance with the Ca 'del Bosco Method. The grapes from 4 "chosen" vineyards, just hand-picked in small boxes, are classified and cooled. Each bunch is selected by expert eyes and hands, to then benefit from the exclusive "grape spa", a particular system of washing and hydromassage of the bunches, through three soaking tanks and a drying system. Afterwards, each bunch is transported over the maceration vat. With de-stemming, the grapes fall into the vat, from above, by gravity. This eliminates the traditional pumping systems, which are the cause of the breakage of the skins and unwanted herbaceous notes. Alcoholic fermentation and maceration were carried out for 14 days, carefully managing the temperature and punching down. The pumping over was carried out daily, using a pair of lifting tanks into which the wine, tapped from the bottom of the vat, is transferred by gravity. The wine, brought up from the flying tanks, is poured into the vat, at a high flow rate, to submerge the "hat". Nothing could be more natural and effective to delicately extract color and tannins. After racking, the wine, still warm, is decanted into small oak barrels, 50% new, obtained from selected woods, aged for at least 3 years. The refinement lasted a total of 11 months, at the end of which the wine was bottled by gravity, in a natural way. Thanks to innovative filling systems, the wine does not undergo oxidative shocks, flapping and further additions of sulphites. Its integrity and healthiness are guaranteed. Intense ruby red, garnet nuances. It is an absolutely typical and seductive wine, with a characteristic aroma, which recalls small fruits such as currant, blueberry, blackberry and raspberry. A soft, elegant and complex flavor of extraordinary persistence.
