DESCRIPTION
Virtue written in the etymology of an ancient term: idem, or being oneself. Cuvée Prestige, the essence of Franciacorta in the Ca 'del Bosco style. A jewel born in 2007 from thirty years of knowledge. Only the best selections of Chardonnay, Pinot nero and Pinot bianco grapes from the best vineyards.
Erbusco, BRESCIA
The base wines of the Cuvée Prestige are the result of a careful selection of the grapes and a skilful vinification conducted in full compliance with the Ca 'del Bosco Method. The grapes, harvested by hand in small boxes, are classified and cooled. Each bunch is selected by expert eyes and hands, to then benefit from the exclusive "grape spa". A particular system of washing and hydromassage of the bunches, through three soaking tanks and a drying tunnel. After pressing in the absence of oxygen, all the musts of the base wines ferment in temperature-controlled steel tanks and remain here until the following March. Seven months of refinement are therefore necessary for the wine to clear up, mature and bring out the best character of the vines of origin. The wines are then expertly assembled in the "magic rite" of creating the cuvée. Only after aging on the lees for at least 2 years this Franciacorta can express all its richness and identity. The dégorgement takes place in the absence of oxygen, using a unique system, conceived and patented by Ca 'del Bosco. This avoids oxidative shocks and further additions of sulphites. It makes our Franciacortas purer, more pleasant and longer-lived. Finally, each packaged bottle is uniquely marked, to ensure traceability.
Tirage from April to June of the year following the harvest; average aging on the lees for 25 months. Dosage at disgorgement: Sugar content equal to 1,5 grams / liter - “Extra Brut”.
Straw yellow color with a fine, abundant and persistent perlage. Scent Fragrant of exotic fruit, peach, apple, citrus and almond. Taste Fresh, elegant, lively, rich, savory and balanced.

To spend on fresh fish appetizers, carpaccio, sushi and sashimi or on a seafood risotto or with zucchini and prawns.

Men, like lands, have a vocation. It was thus that a boy of about fifteen had the dazzling intuition of what a life lived in the light of its realization could be. The meeting between the very young Maurizio Zanella and the sweetness of Franciacorta, when his mother moves to Erbusco and plants the first vineyard, is the first contact of what would have been the love of a lifetime. But it is after a trip to Champagne, whose destination are the famous maisons where that wine that has always fascinated and ignites the imagination is born, that Maurizio returns with the unshakable idea of creating something similar. What used to be a house immersed in a chestnut wood has been transformed into one of the most modern and advanced cellars in Italy. Since then, a single principle has defined the essence of Ca 'del Bosco: the pursuit of excellence.
