DESCRIPTION
Since the Middle Ages we have news of the cultivation of Schioppettino, locally also called Sclopetin or Ribolla Nera, and the wine produced in limited quantities was sought after and renowned for its rarity and quality. Faced with its millenary history, at the end of the sixties of the twentieth century the Schioppettino had almost disappeared and was considered extinct by the bureaucrats who did not even include it in the list of varieties whose cultivation was allowed. In Cialla, in 1970, a small miracle took place: Paolo and Dina Rapuzzi founded the Ronchi di Cialla winery and thanks also to the help of Bernardo Bruno, then mayor of Prepotto, they managed to find about 60 surviving vines from Schioppettino. By selecting the best buds from the shoots, they made new cuttings and managed in the space of 2 years to create a first plant of 3.500 vines which effectively marked the rebirth of the Schioppettino.

Prolonged maceration for 4-5 weeks; indigenous yeasts; pumping over twice a day.
Elevation in French oak barriques for 14-18 months and a further 30-36 months of bottle aging.
Dry red. Bouquet of exceptional elegance and personality. The clearest sensations are white pepper and small red fruits, currants and blackberries, intriguing balsamic and undergrowth notes. Sapid and full, with fruity sensations in balance with minerality; the supporting tannin is fragrant and ripe. Despite being a well-structured wine, it has a refined and almost silky balance; it is baroque, aristocratic, of great elegance and long life; full character and race.
HOW TO SERVE

Uncork the bottle a few minutes earlier, or more, depending on the aging of the vintage.
Aging potential at the buyer: 20-25 years. Particular vintages arrive, in crescendo, at a much later age.
It goes well with elegant dishes that recall the spiciness and finesse of the wine. It also goes well with traditional dishes such as roasted white and red meats; meats with light gravies; noble poultry and feathered game; mushroom-based dishes, medium and hard cheeses, medium-aged mountain cheeses. With aging it acquires complexity and elegance and goes well with white and summer truffles.

If Dina and Paolo, who were the founders in 1970, approached the land for a precise choice of life, the sons Pierpaolo and Ivan are the generation "born on the vine".
