DESCRIPTION
Textbook Sauvignon: herbaceous and vegetable tones on the nose, perfectly balanced flavor in the mouth. Complex soul in a typical fragrant white of Friuli.
A small portion of the crushed grapes (15%) benefits from a short cold maceration sheltered from the air. The juice obtained from the soft pressing of the grapes is left to settle for 24-48 hours. Alcoholic fermentation then begins on clear must, conducted at 18 ° C for 15 days. The vinification is carried out in steel containers, keeping the wine at low temperatures, thus avoiding malolactic fermentation. After fermentation, the wine rests for 4 months on the noble lees which are frequently stirred.
2 months in oak barrels and for 4 months in stainless steel tanks.
Straw yellow, with beautiful green reflections. The scent is characteristic with boxwood, tomato leaf and an intense hint of grapefruit peel. Sensations that expand on the palate which is exuberant with the characteristic acidity. Linden flowers and lime accompany the persistent and bright finish.

Excellent to be enjoyed with asparagus, green and white dishes. The pairing with fish and vegetable tempura is interesting.

Attems: a name that evokes the history of ** wine in Friuli Venezia Giulia **. In fact, the first document attesting the possessions of lands suitable for viticulture in Collio by the Attems dynasty dates back to 1106 and the production of [Ribolla Gialla] and Refosco is recorded in the ledgers of 1764.
