DESCRIPTION
It is produced every year in limited quantities from a selection of the best crus, using only the first pressing. The vines are grown on typical limestone soils of the Chablis region.
Chablis
Very slow fermentation, not cold treated, very light filtration
A few months on the lees in steel
Straw yellow color. The nose is intense with excellent aromas of yellow citrus, lemon and cedar. Hints of golden apple and rennet, white peach and apricot follow. Meadow flowers are also present, and add complexity. On the palate the fruit emerges from the beginning, the white peach not perfectly ripe. Then there are citrus fruits in different variations. Of great evolution.

It does not require decanting
It can be left to rest in the cellar for 10 years
Ideal with fish-based dishes, white meats, risottos and pastas, to try with shellfish.
