The grapes were harvested by hand in 15 kg crates early in the morning and immediately cooled upon arrival in the cellar to keep all the aromatic potential intact. After careful selection, the whole bunches were subjected to a slow and soft pressing with maximum attention to protection against oxidation. After a static decantation of about 24 hours, the musts were put entirely in barriques, 30% new and 70% used, to carry out the alcoholic fermentation at temperatures no higher than 22 ° C. Malolactic fermentation was not carried out. The maturation lasted for 12 months on the lees with periodic batonnage for the whole period and ended in steel tanks for another 3 months. AGING Before bottling, the assembly of the various batches was carried out and a light clarification was carried out. The wine was then subjected to a further refinement in the bottle for 6 months before being placed on the market.
Subsequently, the wine was blended and reintroduced into the barriques for another year, for a total of 24 months. The 2017 Masseto continued aging for another 12 months in the bottle before being placed on the market.

Excellent in combination with both steamed and smoked fish, it also goes well with shellfish, spaghetti with clams, battered vegetables and medium-aged cheeses.
