Manual selection of the grapes before and after unraveling. Spontaneous fermentation follows without the use of added yeasts and maceration assisted by frequent punching down. Everything takes place in cone-shaped wooden vats at a controlled temperature for 32 days.
Aging in barrels for 36 months, and in bottle for 24 months.
At sight it has an intense garnet red, notes of ripe fruit and dried flowers, with a finish of cigar, noble wood and graphite. On the palate it is round and full-bodied, vigorous, robust and important, mineral and with a fine tannin.

HOW TO SERVE

16-17 ° C

It is advisable to oxygenate in a decanter for at least an hour before serving.
Wine of great longevity, if kept correctly it can rest in the cellar for over 20 years.
It goes well with game, red meats, braised meats, grilled meats and aged cheeses.
