DESCRIPTION
Il Cavaliere is now recognized as one of the most interesting expressions of Sangiovese in Tuscany. The vineyards planted with rational criteria (about 6000 pta / h and a conscious choice of clones or mass selections) are cultivated with attention and respect for the natural balance of soil and vineyard. After a first harvest, one / two bunches are left per plant for further maturation which will then result in the selection of the Cavaliere. Aging in concrete for 18 months. The natural qualities of this wine are great elegance, great drinking pleasure, refined, persistent, never intrusive aromatic sensations.
Locality Vigna al Cavaliere, Bolgheri, Castagneto Carducci (LI).
The grapes were left on the vine after a previous harvest step, extending the ripening for a further week. Harvested by hand with great attention to the health of the bunch, 70% of the grapes are de-stemmed and pressed. The yeasts are exclusively indigenous ones. Manual punching down is carried out to submerge the hat and only if necessary an open reassembly. The perfect ripeness of the berry and the grape seed allows us to extend the duration of maceration to the maximum, which can last even months.
In concrete for 18 months
A brilliant ruby red color is presented in the glass. The bouquet is based on elegance and complexity marked by wild berries, dried roses and violets, aromatic herbs and wild blooms, essences and balsamic traces, finished with a fine and captivating spiciness. In the mouth it is intense, with great body and balance. An intertwining of freshness and flavor determines drinkability and makes it difficult to stop for a small taste.
HOW TO SERVE
18-20 ° C
It is advisable to let the wine 'breathe' at least one or two hours before serving it.
Aging potential even over 20 years.
Perfect to accompany pasta with meat sauce, game, stewed red meat, roast-grilled meat, aged cheeses.

The company was founded in 1983, the year preceding the foundation of the Bolgheri Doc which, in fact, sees me among its first protagonists. After an initial precarious period, linked to fractional rents, in 1987 I finally managed to establish the first nucleus of the company with the purchase of the best available land and the construction of the cellar. In 1991 I planted my first vineyard with the awareness of wanting to produce a wine that could be faithful to the trail traced by Sassicaia and Ornellaia, but also to my personal vision and experience as a vineyard.
