DESCRIPTION
Fascinating union between the Sauvignon Blanc, Grechetto, Traminer, Sémillon and Riesling grapes and the unique terroir of Castello della Sala. The bunches, touched by the morning mists and favored by the particular microclimate, are granted to the Noble Mold, Botrytis Cinerea, which reduces the water content, concentrating the sugars and giving the Muffato its characteristic aromas.
CASTELLO DELLA SALA, Locality Sala - Municipality of Ficulle (TR)
The grapes come from the Castello della Sala vineyards, located between 200 and 450 meters above sea level on clayey soils, rich in marine fossils. The grapes were harvested manually by returning to the same vineyard several times in relation to the state of the grapes. After being transferred to the cellar, the grapes were further selected on a sorting belt. A light pressing followed without destemming. After pressing, the must fermented for 18 days at a temperature of around 17 ° C. AGING The wine obtained, still sweet, was transferred to French oak barriques (Alliers & Tronçais) where it matured for about 6 months before continuing to refine in steel for a further 2 years.
Usually after five months the Chardonnay is ready to be transferred back to steel to unite with the Grechetto, which is instead vinified separately and in the "absence" of wood. Subsequently the Cervaro della Sala refines for a few months in the bottle in the historic cellars of the Castello della Sala before being released on the market.
The Pinot Noir della Sala has a bright garnet red color. The nose recalls delicate sensations of spices, violets and small red fruits. On the palate it is typical, soft and savory, with silky and characteristic tannins that amplify its pleasantness.
