DESCRIPTION
The name Cervaro derives from the noble family that owned the Castello della Sala during the fourteenth century: the Monaldeschi della Cervara. Chardonnay grapes combined with a small part of Grechetto for a wine designed to refine over time and represent the elegance and complexity of a unique place. Cervaro della Sala was one of the first Italian white wines to carry out malolactic fermentation and aging in barriques with the first vintage in 1985.

The Cervaro grapes come from 15/20 year old vineyards located in the land surrounding the Castello della Sala, at altitudes between 200 and 400 meters above sea level, in soils rich in marine fossils and clay infiltrations. The bunches, collected during the night, are refrigerated to preserve their aromas, before pressing and destemming. The two varieties mature in different periods, ferment and refine in different ways: the Chardonnay undergoes a short cold maceration (4-6 hours), then ferments for 18 days in new French oak barrels where it remains on its lees for six months. during which it completes the malolactic fermentation. Grechetto, on the other hand, ferments and ages in stainless steel tanks.
The wine is then assembled and bottled and remains in the bottle for a further 10 months in the historic cellars of Castello della Sala, before being introduced on the market.
The Cervaro della Sala 2011 has a bright yellow color with greenish tones. The nose reveals toasted notes, citrus, exotic fruits and light buttery sensations. On the palate it is savory and fresh, long and persistent. Immediately pleasant, it reveals the great potential for an excellent future evolution.
HOW TO SERVE
12-14 ° C
It is advisable to let the wine 'breathe' at least thirty minutes before serving.
It can be left to rest in the cellar for over 5 years if kept correctly.
Ideal with first courses and fish. To be combined with tagliolini with porcini mushrooms and scallops, but also excellent with spaghetti with clams and mullet bottarga, or as a meditation wine.
