DESCRIPTION
Typical expression of a grape variety that is unique in the international panorama for its power and longevity, the Sagrantino of Tenuta Castelbuono, certified organic, surprises with its softness, the result of skilful work in the vineyard and prolonged aging in large wooden barrels.
Owned vineyards in Montefalco and Bevagna, Castelbuono Umbria estate.
Cold pre-maceration at 12 ° C for 30 hours. Maximum fermentation temperature 26 ° - 28 ° C in wooden vats.
Aging in large oak barrels for 24 months and at least 12 months in the bottle.
Intense and bright ruby red color, deep and refined. The nose is a triumph of blackberry and blueberry jam, typical of the variety, with pleasant and intense notes of cherries in alcohol, carob and rose petals. Notes of licorice and chocolate embellish the organoleptic picture of marked typicality. The taste is creamy, of great power and persuasiveness at the same time, long and persistent with tannins of chiseled workmanship, of rare finesse, elegance and gentleness.

CELLAR
The Tenuta Rocca di Fabbri company was founded in 1984 on the initiative of Pietro Vitali, who during his long experience in the world of antiques had grasped the profound link between artistic beauty, harmony of the landscape and food and wine traditions of the territory. He identified in the Montefalco area, the ancient cradle of vine cultivation and winemaking, practices introduced by the French Benedictines, but then lost after the middle of the 500th century. Right here he wanted to replant vines with particular cultivation methods, in order to produce wines that had the fragrance of the perfumes of this land and the elegance of Gozzoli's paintings. The interior of the Rocca, a XNUMXth century fortification, was restored to create the suggestive cellar, and the buildings included within the walls were restored.
