DESCRIPTION
The desire to express the exceptional qualities of the estate has been the basis of Ornellaia's philosophy from the very beginning. Ornellaia Bianco is a blend with a majority of Sauvignon Blanc, the result of three small vineyards that have demonstrated their extraordinary ability to express the unique character of Ornellaia.
Location Ornellaia - Bolgheri - Castagnetto Carducci (Li)
The grapes were harvested by hand in 15 kg crates early in the morning and immediately cooled upon arrival in the cellar to keep all the aromatic potential intact. After a careful selection, the whole bunches were subjected to a slow and soft pressing with maximum attention to protection against oxidation. After a static decantation of about 24 hours, the musts were put entirely in barriques, 30% new and 70% used, to carry out the alcoholic fermentation at temperatures no higher than 22 ° C. Malolactic fermentation was not carried out. The maturation lasted for 12 months on the lees with periodic batonnage for the whole period and ended in steel tanks for another 3 months.
Before bottling, the various batches were assembled and lightly clarified. The wine was then subjected to a further refinement in the bottle for 6 months before being placed on the market.
"Although the summer was mostly characterized by a dry and sunny climate, in 2016 the climatic conditions were particularly advantageous for ripening, in particular, the cool nights favored the development of aromatic expression and acidity and the absence of summer rains made it possible to obtain rich and concentrated grapes. All these elements have given life to an extraordinary Ornellaia Bianco. Golden color, scent of ripe citrus and mineral on the nose. Let the wine 'breathe' at least half an hour before serving.
Excellent in combination with both steamed and smoked fish, it also goes well with shellfish, spaghetti with clams, battered vegetables and medium-aged cheeses.
