DESCRIPTION
Brunello is the “heart” of the Fattoria dei Barbi, produced by us since 1892 and highly decorated on numerous occasions.
FATTORIA DEI BARBI, MONTALCINO (SI).
The de-stemmed grapes underwent a sudden drop in temperature up to 16 ° C, in a CO2 protected environment. This cooling process of the grape skin allows to obtain a greater extraction of the content in anthocyanins and polyphenols. The normal alcoholic fermentation lasted for about 16/17 days at a controlled temperature of 27 ° - 28 ° C. The racking was followed by malolactic fermentation and subsequently the wine was placed in wood of medium-small capacity (2.25 hl - 15 hl) which was followed by the passage in barrels with a higher capacity.
The Brunello is aged in small and medium capacity barrels for at least 2 years with subsequent passage in higher capacity barrels. Aging: in the bottle for a minimum of 4 months.
Color: bright ruby red. Bouquet: ripe red fruit, plum, sour cherry, mentholated hints. Taste: very balanced, hints of cinnamon, savory and balsamic notes, persistent.
HOW TO SERVE
15-17 ° C
It is recommended to let it breathe at least 30 minutes before serving.
It can rest in the cellar for 4-5 years if kept correctly
It goes perfectly with grilled meat, game, pasta, mushroom risotto. Try it with fish.
