DESCRIPTION
Born from the same grapes destined for Sciala, harvested late when fully ripe and carefully selected in the vineyard, a wine with an important structure and complex aromatic charge is born.
Vineyards of Surrau and Moro - Arzachena
The vineyards (100% Vermentino) are trained espalier with Guyot pruning, in soils deriving from medium-textured granite weathering. After destemming, the must remains in contact with the skins for 12/24 hours at a temperature below 10 ° C.
Fermentation takes place for 50% in large non-toasted French oak barrels and for 50% in steel and concrete tanks. The assembly then evolves in the presence of its own yeasts in steel and cement tanks for 6 months. Rest in the bottle for at least another 6 months.
Color: straw yellow with golden reflections.
Nose: intense bouquet with notes of ripe fruit and Mediterranean scrub.
Taste: soft, long, full and persistent, with fruity, mineral and tertiary notes.
HOW TO SERVE
18/20 ° C
Uncork the bottle at least an hour before serving.
If kept in good conditions of humidity and light, it evolves for up to ten years.
Wine with a wide combination: fish cuisine, white meats, fish soups, blue and medium-aged cheeses.
