Cuvée Annamaria Clementi is the result of the pursuit of excellence, both in the vineyard and in the cellar. In compliance with the Ca 'del Bosco Method, the grapes, harvested by hand in small boxes, are promptly cooled in cold rooms. Each bunch is selected by expert eyes and hands, to then benefit from our exclusive "spa of the bunch". A particular system of washing and hydromassage of the bunches, through three soaking tanks and a system for complete drying. The base wines are obtained exclusively from very first pressing musts. Alcoholic fermentation takes place exclusively in small oak barrels, made with selected woods and aged for at least 3 years. Here it remains on its lees for another 6 months, also carrying out the malolactic fermentation. No compromises, no concessions: only the wine from the best barrels, of the 26 base wines of origin, is tapped to give rise to the Cuvée Annamaria Clementi. A pair of flying tanks transfers it by gravity, from the barrels to the assembly tank. A very long aging in contact with the yeasts, which lasts for more than 8 years, determines the unique product. An absolute Franciacorta. The dégorgement takes place in the absence of oxygen, using a unique system in the world, conceived and patented by Ca 'del Bosco. This avoids oxidative shocks and further additions of sulphites. It makes our Franciacortas purer, more pleasant and longer-lived. In addition, each packaged bottle is uniquely marked, to ensure traceability.
Tirage in April 2010. On average it spends 9 years of aging on the lees. No addition of liqueur to the disgorgement.
Of a very bright golden yellow, it has a fine and persistent perlage. The nose has mineral notes with a very light smoke and a succession of citrus fruit and hints of walnut, chamomile and broom. Every now and then a fragrant note of pastry reminds us of the long aging on the lees. The sip is full and structured, very fresh and with a very long aromatic persistence, it closes with notes of almonds.
