DESCRIPTION
The Prosecco Extra Brut Asolo di Col de 'Salici plays an important role in the winery's proposal, it is characterized by its characteristic and original organoleptic profile at the same time, characterized by the right sugar and alcohol content and by good fixed acidity, which contributes to enhance the aromas and maintain them over time. A Prosecco that can withstand both informal situations and more demanding accompaniments.
Asolo hills (Treviso)
Immediately after the harvest, part of the grapes are subjected to soft pressing and destemming; the must obtained is then kept at a constant temperature of 5-6 ° C for about 12 hours. The liquid part is fermented separately in steel tanks at a constant temperature of 18-20 ° C; the fermentation lasts for about 15 - 20 days. Subsequently, the Extra DRY cuvee is made (using a variable percentage of cryomacerated wine) followed by the second fermentation.
Aging in the bottle for 3-4 months
Straw yellow in color, it is characterized by a fine and persistent perlage. Delicate notes of white flowers such as acacia and a particularly dry and dry finish.

The Col de 'Salici brand was born in 1997, together with the Compagnia del Vino. Prosecco was by no means popular in those years but Giancarlo Notari was able to intuit the characteristics of freshness and immediacy that make this denomination one of the most dynamic, modern and well-known realities of the national wine scene today. A high-level packaging is combined with quality in production: the grapes are selected only in the best production areas of the DOC and DOCG Conegliano Valdobbiadene, the vinification takes place with partial cryomaceration - which maximizes the fragrance and the fruity sensation of the variety - and bottling (isobaric) is carried out every 40 days to guarantee the market an always fresh product. Col de 'Salici only produces wines in the sparkling version: Cartizze, Extra Dry and Brut; the line is completed by a Rosé sparkling wine made from Raboso del Piave grapes.
