DESCRIPTION
The creaminess of Franche-Comté Satén comes from vineyards exposed to south-west wind in the municipalities of S. Carlo and Pagni. The predominantly sandy soils give those characteristics of freshness that make it a very drinkable sparkling wine. The limited yield per hectare is an important quality index of the product.
Adro (Brescia) ITALY
The harvest takes place in the last ten days of August, the first ten days of September; the grapes are harvested manually, strictly in crates, in the early hours of the day when temperatures are still limitedly low. Pressing of the whole grapes with a particular vacuum press at a pressure of - 0,7 bar, working in an inert environment and using only the first pressing. Alcoholic fermentation takes place in thermally controlled steel tanks and about 20% of cryomacerated must ferments in selected medium-toasted oak barriques.
At least 20% ferments in precious oak barriques. Permanence on the lees in the bottle for about 48 months. Maturation in the bottle from 3 to 6 months after disgorgement.
It has characteristics similar to Brut but it differs from it for greater softness, more delicate and fine, less aggressive foam and perlage; there is a light toasting, balanced structure and a delicate taste that enhances its softness. The eye is pale straw yellow, the nose has hints of pineapple and vanilla.
