DESCRIPTION
The production of rosé wines in Bolgheri has ancient roots. That of Poggio al Tesoro, born with Cassiopea, has been enriched starting from the 2016 vintage with the Pagus Cerbaia, a small plot that rests on sedimentary soils. From the Podere comes a targeted selection of red berried grapes, Syrah and Cabernet Sauvignon, which ferments partly in amphorae and partly in oak barrels.

In rosé with light maceration, fermentation at a temperature of 16 ° C for 20 days
Fermentation and aging 80% in terracotta amphorae and 20% in oak barrels (no steel). Assembled in steel tanks for 4 months, 2 months in the bottle.
Pink shades reminiscent of spring blooms, fresh scents, dotted with flowers that alternate with berries, sweet and sour at the same time. A juicy, immediate and persuasive sip like a breeze that suddenly refreshes a summer afternoon.

Pagus Cerbaia thrives on a double passion: in the case of meats, chicken with peppers, rabbit alla cacciatora, and courtyard ragout seasoned with homemade tagliatelle, enhance it; in the case of fish, the harmony is with sea bass cooked in a salt crust.
