DESCRIPTION
Obtained with a selection of the best cuve, initially intended for the production of Gavi dei Gavi® black label and only in great vintages. This wine, after an aging that can last up to ten years, only in steel tanks and on indigenous yeasts, reaches the bottle with that unmistakable intensity and nobility of sensations that only time gives to Great Wines. Rare and unique wine, to be tasted meditating on the extraordinary taste sensations that bring back to the memory, as in the Proustian 'Recherche', the taste of distant memories: the bouquet that evokes the sea breeze, the minerality of the earth, but also exotic fruits and honey. Only the experience of almost a century of production can give this harmony, where power and finesse come together in a splendid balance, bringing us back to nature and to the D'Antan sensations.
HILLS OF GAVI (AL)
In white, cold, partially macerated on the skins; left in contact with autochthonous yeasts of first fermentation (“sur lie”) until bottling. Naturally clear bottled, for decanting, without filtration.

COLOR: light straw yellow, with delicate greenish reflections. Natural clarity by static decanting - unfiltered. BOUQUET: intense, long, continuous, persistent, a warm and persuasive sensation in a soft and elegant complex. TASTE: very typical, slight mineral hints that fade into flint; toasted walnut and almond in the finish.
HOW TO SERVE

To better appreciate the peculiarities of this wine, it is advisable to open the bottle well in advance before tasting; a short aeration will allow the wine to fully express all its complexity of aromas and flavors.
Excellent in the early years, it retains its characteristics over time.
Excellent throughout the meal, for after dinner and as a "meditation". It is enhanced when paired with savory cheeses and meat pâté.
CELLAR
The La Scolca® estate was purchased between 1917 and 1919 by the great-grandfather of the current owner Giorgio Soldati, who today runs the company together with his daughter Chiara Soldati, fifth generation with an eye to the third millennium. The past and the future coexist in this company that best combines the naturalness of those who have always lived in this world with the speed of those who look forward with the foresight of courageous captains: never as in the case of the Soldati family do names have a meaning. symbolic.
