'Moncucco' Moscato d'Asti DOCG - Fontanafredda
Excellent moscato with a straw yellow color with golden reflections, surprising because full of aromas, hints of fish, pear, honey, lime, orange and lemon with distant notes of sage immediately arrive on the nose.
The grapes are partly fed directly into the presses and partly, after being de-stemmed, are sent to a thermo-conditioned tank for about 12 hours at a temperature of 5 ° C undergoing a short cryomaceration. Very delicate pressing that allows you to extract from the grapes only the flower must which is left to settle in the cold, separating it from the solid part present in the must. Fermentation starts when the temperature reaches 18 ° C and is stopped when 3 degrees of alcohol are reached.
