The winery, owned by the Dufour family for many generations, is located in the municipality of Barsac: the latter has a well-rooted winemaking tradition and is known above all for its sweet wines, defined by experts as real "divine nectars". The cultivation of vines in the area in question dates back to at least 1660. Château Simon uses traditional methods combined with innovative procedures and the most modern agricultural techniques: for example, the use of chemical fertilizers is avoided. One of the most used vines is the Semillon, a white grape, widespread throughout the territory. Chateau Simon it also uses Sauvignon blanc grapes, native to south-western France, and Muscadelle, perhaps derived from the Dordogne area. These vines are subjected to the action of the so-called noble rot, obtained from the Botrytis cinerea mushroom, which helps the conservation process of natural sugars in the finished product. The wine that most of all represents the company is Barsac “Grand Vin de Sauternes”, characterized by a soft and enveloping body.
