Domaine Trapet Père et Fils
The Domaine Trapet Père et Fils was founded in 1919 in Gevrey-Chambertin and is currently managed by Jean Louis Trapet who has been strenuously committed to the study and application of the principles of biodynamics, converting the company and certifying it Biodyvin in 1998.
In the 90s, the company was subject to a division following a succession between cousins, which reduced the viticultural heritage, remaining however of absolute value with 15 total hectares, of which 1,9 in the Chambertin Grand Cru, 0,75 , 1938 hectare in the Latricières-Chambertin Grand Cru with old vines dating back to 0,60 and XNUMX hectare in the Chapelle-Chambertin Grand Cru.
Jean-Louis Trapet is a vigneron with a great sensitivity, a quality that is found in his elegant and refined wines.
The grapes are de-stemmed for 30% and, subsequently, cold macerated for about 8 days. A long fermentation of one month follows at a temperature of 32 °. Aging takes place in new wood for 30% on the villages and 75% on the 1er cru and Grand Cru, for a duration of 15/18 months.
Jean-Louis is flanked by his wife Andrée and his parents, proud supporters of the work of his son who was able to make the quantum leap at the Domaine, currently at the absolute top of Burgundy.
