The 2008 was only bottled in 1,5L magnums with a total of 8.000 available worldwide.
The 2008 Salon is simply extraordinary. Unfortunately, there will only be 8.000 magnums in the world, as President Didier Depond made the unusual and dramatic decision to bottle the entire 2008 vintage in magnums only, which is a huge decrease from typical production (when the Salon is made) of about 60.000 bottles. In the glass, 2008 is simply extraordinary. Soft and silky, with a breathtaking finesse, 2008 dazzles with an amazing interplay of bright Chardonnay fruit, an intense aroma and crystal clear precision. A kaleidoscope of aromas, flavors and textures captures all the senses. 2008 remains young and austere, but like many wines of this great vintage, Salon has an extra dimension of structural depth that prevents it from being austere. It is simply one of the most magnificent champagnes I have ever tasted. The 8.000 magnums will be sold in a special wooden case with 2 bottles each from 2007, 2006 and 2004. Blossoming in January 2019 with a dosage of six grams per liter, Salon's 2008 Brut Blanc de Blancs Le Mesnil is a surprising wine, unfolding in the glass with aromas of citrus oil, fresh bread, crunchy green apple, white flowers, smoke and oyster shell. Full-bodied, layered and punchy, it's deep and concentrated, with a tightly rolled core of fruit that's backed up by a backbone of acidity. Seamless and unfailingly precise, it ends with a long, penetrating and mineral finish. While its aging potential is immense, its intensity and balance make it enjoyable and persuasive, even today. Given the staggering price tag of this magnum-only release, I was determined to keep the wine to the highest possible standards, but it also surpasses the prodigious 1996 and certainly ranks as the best Salon since at least the 70s. Only 8.000 magnums released instead of the usual 50.000 bottles. Disgorgement: January 2019. Dosage: 5 g / l. A mild winter followed by a rainy spring. Then came a long period of good weather which allowed the grapes to ripen slowly, bringing a singular quality to the raw material. After a first floral and fruity nose, fresh notes of menthol invade the glass. Remarkable power and generosity on the palate, but the mouthfeel is crystal clear and perfectly balanced. 2008 Salon is the epitome of Salon: diaphanous, yellow diamond sparkling with green rays; on the nose its aromatic depth strongly recalls the earth, heralding on the palate that sense of balance and structural firmness that will allow the wine to develop its fullness and complexity. There is a pulsating sense of stone here, an accentuated minerality, its chalky acidity first of all drying then appetizing, lean and fine until the end of time.

First of all, wait. Once the 2006 Salon, let it breathe a little, to open up. Then, just look at it: its shimmering golden color, silver and green reflections. The infinite bubbles, so small, release the familiar scents of Salon in its first burst. Notes of white flowers, citrus peel, lightly toasted brioche. Then the glass is magically filled with autumn tones, fresh hazelnuts, praline, dried apricot, ripe yellow fruits. First-rate romantic, the 2006 Salon embodies the light-heartedness of youth, tempered by experience. And here lies its true enigma and its charm. Clean and lively on the attack, the intense freshness and minerality of the wine holds its aromatic promise - an impressive nose with hints of minerals, flint, stones, smoked tea, just a touch of mint. Tense and sharp in the mouth, the wine is all about purity and fine acidity. The wine becomes rounder when it is aired in the glass, revealing a nice vinous, the curve that counterbalances its acidity to perfection. And on the finish, the slightest hint of bitterness, the signature of many great wines.

HOUSE Salon
Salon is considered one of the "icons" of Champagne. Recognized as the original “Blanc de Blancs” Champagne, it is produced only in exceptional vintages and obtained from a single grape variety: Chardonnay. The grapes come from their own “Le Jardin de Salon” parcel (1 Ha), located behind the house in Le Mesnil-sur-Oger and from 19 selected parcels (total 9 Ha) owned by other growers. The Champagne Salon was founded in 1905 by Eugène Aimé Salon. Dissatisfied with the quality of most of the Champagnes he was served, he decided to make his own Champagne according to his taste.
