Chateau Simon
Château Simon represents a well-known point of reference in the wine scene of New Aquitaine, an area renowned for its warm and temperate climate, particularly favorable for the development of vineyards. Located in the municipality of Barzac, Château Simon has been owned by the Dufour family for numerous generations. The cultivation of vines in the area dates back to at least 1660, as proven by a document attesting to the harvesting of grapes in the various estates in the area in that year.
Over the centuries the company has reached an area of approximately forty hectares, operating with traditional methods combined with innovative procedures and the most modern agricultural techniques: for example, the use of chemical fertilizers is avoided. Château Simon uses Sémillon grapes, widespread throughout the territory, Sauvignon Blanc and Muscadelle.
These vines are subjected to the action of the so-called noble rot, obtained from the Botrytis cinerea fungus, which is fundamental for the drying process of the grapes. The wine that most embodies the company's values and passion is the Barsac “Grand Vin de Sauternes”, characterized by a soft and enveloping body. It is a sweet mutated white wine, left to refine for 18 months in French oak barriques, a perfect symbol of the prestige and fame of this excellent winery.
