Castellar
Historic Chianti Classico company, Castellare di Castellina was born in its present form in 1968, thanks to the merger of five different farms. A magical place where the vineyards - thirty-three hectares in total - are perfectly integrated into the environment, between woods and other crops. An area in which excellent exposure, good water drainage, mixed soils of calcareous marl, marl and little clay, have always produced well-structured, intense wines suitable for long aging in the bottle.
The cellar has been owned by the entrepreneur Paolo Panerai since the end of the 70s, who immediately began a long process of research aimed at improving all the labels. A careful census of the vines, undertaken immediately after purchase, for example made it possible to select the best species of Sangiovese for the “Sodi di San Niccolò”, the company's symbolic wine. Not only that: an experimental plot planted on the property in collaboration with the Universities of Milan and Florence and with the Institute of San Michele all'Adige, allows continuous research on the best clones as well as the production of selected cuttings for the renewal of the vineyards.
