“The Paddeu Agricultural Company was born in 2008 from my hands. In fact, I am a craftsman, a bricklayer born in the fields and vineyards of Mamoiada my country. That year with the help of my family and a couple of hectares of land that came to me by inheritance, I plant a vineyard. Rejecting the "rooted cuttings" on the market, he is passionate about the history of a well-known Sardinian farm, I put on the ground with the system of cuttings about 8000 shoots of Cannonau vine, which has always been cultivated in my country. A system that I consider innovative, as it perfectly respects the territory, and keeps tradition, culture and identity in order (with facts), in a historical moment of confusion and homologation. 8000 plants on a clear foot, that is, without the intruder American foot.
Within 3 years, the new plants are already entering maximum production, with a quality of grapes superior to that of the rooted cuttings grafted on an American foot and comparable to that of the old vineyards. At the same time I adapt a part of my house to a "cellar" and certify it in accordance with the law. From the grapes harvested from the vineyard I make wine in my cellar; dynamic, at the same time traditional, but above all free from all schemes.
I gave it the name of Minneddu (diminutive of the name of my maternal grandfather also a peasant craftsman and cooper). Minneddu in this moment appears to the world as an innovative wine: natural, traditional and artisanal. To do this I do not filter and I do not use "breeding" ferments, but only the indigenous ones "in wild pasture".
And I don't add preservatives because the only way to enjoy natural wine is to drink it in the vintage when it is "done", when it is young it is healthy and do not keep it by force.
